a taste of the recipes

Here is a selection of the recipes you can learn how to make on the workshops. All are entirely free from wheat, dairy, sugar, honey and dried fruit.

The time each recipe takes to make is included to help you if you are planning your two hour workshop. Alternatively, use my Menu Suggestions.

(Recipes that contain nuts and/or coconut butter are noted. All other recipes are nut and coconut butter free.)

CHOCOLATE TRUFFLES & BARS:

dark decadent truffles

Melt in your mouth truffles with a rich and creamy, almost alcoholic taste. Contain nuts and coconut butter.

white chocolate bars

This recipe makes 3 creamy white chocolate bars to rival the Milky Bar Kid.

Can be made plain or flavoured with mint choc chip, coffee, mesquite (for a caramel flavour) etc. Contains nuts and coconut butter. (20 mins)


mint choc chip

This is a variation on the above recipe, a crunchy, peppermint tasting chocolate, reminiscent of the ice cream. Contains nuts and coconut butter. (25 mins)

 


cath's fudge

This recipe was created by Catherine Parker, who runs raw food workshops in North London.  It has a wonderfully chewy, soft, melt-in-your-mouth texture - just like fudge in fact! Nut-free (20 mins)


cacao gold

This is another really simple but luscious chocolate recipe, this one using lucuma (the butterscotch tasting dried powder of a Peruvian fruit)  as one of only four basic ingredients to create a beautiful chocolate bar or truffle that can be flavoured in a variety of ways. They were instant hit when I made them for my unofficial chocolate testers - my brother and his girlfriend. Nut-free (20 mins)


coconut bounty

This is another excellent starter recipe, and one that children really enjoy making because it's so easy. It tastes a lot like a well-known chocolate bar and I like it because it gives the necessary chocolate satisfaction but doesn't contain much actual chocolate. Nut-free. (15 mins)

DESSERTS

 chewy chocolate almond cake
This one is fast becoming a favourite, both with me and everyone who tries it. Soaking the almonds for a few hours before making the recipe improves their healthfulness and is also what gives the cake its lovely chew consistency. There would be a photo, but it keeps being eaten before I get around to taking one!

 chocolate mousse  

A super smooth, velvety mousse that tastes like heaven and contains a surprise ingredient - avocado. Whip it up for a private feast, or serve it to friends who will never guess you haven’t spent hours over it. You can even give it to your kids for breakfast! It also works well in a tart. Nut free. (20 mins)


 chocolate ganache

A luxurious and sophisticated dessert that sets to a firm mousse-like consistency. Can be made with or without nuts. (50 mins)


chocolate ice cream
Description: A very easy recipe to put together but so more-ish. Contains nuts.


 


chocolate orange cake
Uses cacao nibs rather than chocolate powder to create this dessert/tea time treat.


 coffee layer cake     

Layers of coffee cream and ground almonds are built up to form a delicious cake. Can also be made in other flavours including chocolate. Contains nuts and coconut. (50 mins)


triple layer chocolate cake

This gourmet dessert will impress even the most sceptical of your friends. Each of the three layers can also be used to make three different types of chocolate sweets so you get four recipes in one. Contains nuts and coconut butter. (50 mins)


 lime mousse  

This recipe tastes just like the filling in the American dish Key Lime Pie. Nut-free (20 mins)

 

 


millionaire shortbread
A Chocolate Caramel Shortbread recipe so rich and yummy you'd never guess it had had all the 'nasties' taken out. Can be made with or without nuts.


sticky toffee tart

Could this be the world’s first healthy sticky toffee pudding? If so, it loses nothing in the taste. In fact, I think it’s far superior to the ‘real’ thing. This is one of the few desserts that can be left out of the fridge for a long period of time without detriment -in fact this is when it’s at its sticky toffee best. Kept in the fridge, it’s equally delicious but tastes more like Bakewell Tart. Contains nuts and coconut butter. (50 mins)


strawberry mousse
Such an easy recipe but so delicious. A workshop favourite. Contains coconut. Nut free (20 mins)

 


 summer pudding 

This dish really does taste like summer pudding but is completely wheat-free. It can be made using either nuts or seeds If nuts are used, there is a secret to making it low-fat. (No coconut.) (20 mins)
