dark decadent truffles

 

Melt in your mouth truffles with a rich and creamy, almost alcoholic taste. Contain nuts and coconut butter.  (Time to make: 30 mins, or 60 mins if you want to   experiment with different flavourings as well). One version is taught on the Truffles & Bars Workshop, another version will be in the chocolate recipe booklet and a third is the recipe used in the forthcoming Truffle Making Kit

white chocolate

 

This recipe makes a creamy white chocolate bar that’s enough to make the milky bar kid jealous.

 

Can be made plain & also flavoured with mint choc chip, coffee, mesquite (for a caramel flavour) etc. Contains nuts and coconut butter. (Time to make: 20 mins). Will be in the chocolate recipe booklet.

chocolate fudge

 

One of the most popular recipes that I make. Nut-free. (Time taken to make: 20 mins) This is one of the recipes in the chocolate recipe booklet.

cath's fudge

 

This recipe was created by Catherine Parker, who runs raw food workshops in North London.  It has a wonderfully chewy, soft, melt-in-your-mouth texture - just like fudge in fact! Nut-free. (Time taken to make: 20 mins)

 

cool coconut truffles

 

A great starter recipe, and one that children can join in with because it's so easy. Despite its simplicity, it is sophisticated enough to serve at dinner parties. Nut-free. (Time taken to make: 15 mins or more if you want to experiment with flavouring). In the forthcoming chocolate recipe booklet

 

cacao gold

 

This is another really simple but luscious chocolate recipe, this one using lucuma (the butterscotch tasting dried powder of a Peruvian fruit)  as one of  four ingredients to create a beautiful soft chocolate bar or truffle. Nut-free. (Time to make: 20 mins) One of the recipes taught in the Truffles & Bars Workshop

 

chewy chocolate almond cake

 

This one is fast becoming a favourite, both with me and everyone who tries it. This cake has a lovely chewy consistency reminiscent of dried fruit even though there is no dried fruit in it. There would be a photo, but it keeps being eaten before I get around to taking one! Made in the Chocolate Desserts & Cakes Workshop.

chocolate mousse  

 

A super smooth, velvety mousse that tastes like heaven & contains a surprise ingredient. Whip it up for a private feast, or serve it to friends who will never guess you haven’t spent hours over it. You can even give it to your kids for breakfast! It also works well in a tart. Nut free. (Time to make:20 mins) Made in the Chocolate Desserts & Cakes Workshop.

chocolate ganache

 

A luxurious and sophisticated dessert that sets to a firm mousse-like consistency. Nut-free. (Time to make: 50 mins). This will be in the chocolate recipe booklet.

chocolate ice cream

 

What can I say but - lovely! Can be sweetened with either xylitol or agave and keep pretty well in the freezer for a couple of weeks, though it’s likely to be eaten well before then! This will be in the chocolate recipe booklet.

Cacao nibs are combined with brazils or pecans to to create this dessert/tea time treat.

Layers of coffee cream and ground almonds are built up to form a delicious cake. Can also be made in other flavours including chocolate. Contains nuts and coconut. (Time to make: 50 mins)

This lovely dessert will impress even the most sceptical of your friends. Each of the three layers can also be used to make three different types of chocolate sweets so you get four recipes in one. This recipe, with its light citrussy taste & texture is inspired by Key Lime Pie. Nut-free (20 mins)

millionaire shortbread

 

A Chocolate Caramel Shortbread recipe so rich and yummy you'd never guess it had had all the 'nasties' taken out. Can be made with or without nuts. Time to make: 50 mins. Will be in the forthcoming chocolate recipe booklet.

goji angel tart

 

The lovely tangerine orange colour comes from the goji berries. Very rich and yummy.  Contains nuts and coconut butter. (Time to make: 50 mins)

strawberry mousse

 

An easy recipe but so delicious. A workshop favourite. Contains coconut. Nut free (Time to make: 20 mins)

summer pudding

 

This dish really does taste like summer pudding but is completely wheat-free. It can be made using either nuts or seeds If nuts are used, there is a trick to making it low-fat. (Time to make: 20 mins)

All are made without wheat/gluten, dairy, sugar, honey & dried fruit (except goji berries) & don’t require cooking.

 

The time each recipe takes to make is included to help you if you are planning your own workshop.

 

Recipes that contain nuts are noted for those who are nut-sensitive.  All other recipes are free from nuts.
