Raw Chocolate Truffles

Melt in your mouth truffles with a rich and creamy, almost alcoholic taste. Contain nuts and coconut butter.  (Time to make: 30 mins, or 60 mins if you want to   experiment with different flavourings as well). This recipe is taught on the Truffles & Bars Workshop. Another version is the recipe used in the Truffle Making Kit.

Raw Chocolate Cool Coconut Truffles

A great starter recipe, and one that children can join in with because it's so easy. Despite its simplicity, it is sophisticated enough to serve at dinner parties. Nut-free. (Time taken to make: 15 mins or more if you want to experiment with flavouring). In the forthcoming chocolate recipe booklet

A super smooth, velvety mousse that tastes like heaven & contains a surprise ingredient. Whip it up for a private feast, or serve it to friends who will never guess you haven’t spent hours over it. You can even give it to your kids for breakfast! It also works well in a tart. Nut free. (Time to make:20 mins, or 45 mins if you want to experiment with flavours.) Made in the Chocolate Desserts & Cakes Workshop

 

Raw Chocolate Goji Ganache

A luxurious and sophisticated dessert that sets to a firm mousse-like consistency. Really seriously yummy Nut-free. (Time to make: 50 mins). This will be in the chocolate recipe booklet.

Raw Chocolate Ice Cream

What can I say but - lovely! Can be sweetened with either xylitol or agave and keeps pretty well in the freezer for a couple of weeks, though it’s likely to be eaten well before then. This will be in the chocolate recipe booklet.

This lovely dessert will impress even the most sceptical of your friends. Each of the three layers can also be used to make three different types of chocolate sweets so you get four recipes in one. Contains nuts and coconut butter. (Time to make: 50 mins). This will be in the chocolate recipe booklet.

 

Sugar Free Dairy Free Lime Mousse

This recipe, with its light citrussy taste & texture is inspired by Key Lime Pie. Nut-free (20 mins)

 

 

Raw Chocolate Millionaire Shortbread

A Chocolate Caramel Shortbread recipe so rich and yummy you'd never guess it had had all the 'nasties' taken out. Can be made with or without nuts. Time to make: 50 mins. Will be in the forthcoming chocolate recipe booklet.

Goji Angel Tart

The lovely tangerine orange colour comes from the goji berries. Very rich and yummy.  Contains nuts and coconut butter. (Time to make: 50 mins)

Sugar Free Dairy Free Strawberry Mousse

An easy recipe but so delicious. A workshop favourite. Contains coconut. Nut free (Time to make: 20 mins)

 

Sugar Free Dairy Free Wheat Free Summer Pudding

This dish really does taste like summer pudding but is completely wheat-free. It can be made using either nuts or seeds If nuts are used, there is a trick to making it low-fat. (Time to make: 20 mins)

Here is a selection of the recipes you can learn how  to make on the workshops or which will shortly be appearing in the first chocolate recipe booklet.

 

All are made without wheat/gluten, dairy, sugar, honey & dried fruit (except goji berries) & don’t require cooking.

 

The time each recipe takes to make is included to help you if you are planning your own workshop.

 

Recipes that contain nuts are noted for those who are nut-sensitive.  All other recipes are free from nuts.

Three sumptuous layers: a crunchy nut base, a velvety chocolate filling, topped with a dreamy non-dairy cream. I’m just not sure it can get any better... Definitely one of my favourite recipes, and I know I’m not the only one. No coffee or alcohol, but of course you’re free to add them when you make it yourself...(Time to make: 50 mins). Taught on the Desserts & Cakes Workshop.

Raw Chocolate Pecan Truffles

A nutty truffle made with pecans and cacao nibs. Decidedly different and very more-ish. (Time to make: 15 mins). Will be in the forthcoming chocolate recipe booklet.

A beautiful melt-in-your-mouth, chocolate bar that can also be made into bonbons, & decorated and flavoured in endless different ways, including with the freeze-dried strawberry pieces Sweet Sensations sells. Combined with the new specialist chocolate moulds we now sell you can make incredibly professional looking chocolate bars and bon bons for a fraction of the price of the raw chocolate bars you can buy in the shops and on the net. This recipe (using chocolate powder) is taught on the Chocolate Truffles & Bars workshop. Another version using cacao paste will be in the chocolate recipe booklet. (Time to make: 30 mins for the basic recipe - longer if you want to experiment with different fillings/flavours.)

Chocolate Chip Sugar & Dairy Free Ice Cream

Have an ice cream fest! There is an amazing variety of ice creams and sorbets you can make without using sugar, dairy or wheat. Ice Creams: Vanilla, Vanilla Almond, Choc Chip, Strawberry, Coffee, Toffee, Hazel & Coconut, Spicy Chocolate Hazelnut, Peach, Pecan, Lemon, Ginger. Sorbets: Strawberry, Kiwi, Blueberry & Passionfruit, Orange & Coconut, Raspberry & Coconut. (Time to make: 20-30 mins each). These recipes will be in the almost ready Ice Cream E-Booklet

Sugar Free Dairy Free White Chocolate Truffles

A delicious white chocolate recipe that can be made with a variety of fillings - choc chip, mint choc chip, nut and pecan, strawberry, buckwheat crunch. (Time to make: 30-45 mins, depending on how many fillings you want to experiment with. This recipe is taught on the Truffles & Bars Workshop.

This one is fast becoming a favourite, both with me and everyone who tries it. This cake has a lovely chewy consistency reminiscent of dried fruit even though there is no dried fruit in it. There would be a photo, but it keeps being eaten before I get around to taking one! (Time to make: 40 mins.) Made in the Chocolate Desserts & cakes Workshop.

Superfood Raw Chocolate Caramel Bars

I love this recipe! I made it so that I could have a bar that didn’t have the sometimes rather over-stimulating properties of raw chocolate powder, but would still work taste and texture-wise. And boy, does it work! It’s quite a dangerous recipe to make, as it’s so utterly more-ish. Make it at your peril, it won’t last long...(Time to make: 30 mins) One of the recipes in the chocolate recipe booklet.

 

 

Raw Chocolate Fudge

One of the most popular recipes that I make. Nut-free. (Time taken to make: 20 mins) This is one of the recipes in the chocolate recipe booklet.

This recipe makes a creamy white chocolate bar that’s enough to make the milky bar kid jealous.

 

Can be made plain & also flavoured with mint choc chip, coffee, mesquite (for a caramel flavour) etc. Contains nuts and coconut butter. (Time to make: 30 mins). Will be in the chocolate recipe booklet.
